Quinoa salad with berries

Daniel del Toro, assisted by his daughter Claudia, teaches us how to cook a quinoa salad, to which he adds a special touch: berries. Ingredients and preparation
- 250 g quinoa
- 100 g soft fruits
- 1 avocado
- 10 cherry tomatoes
- 10 Manzanilla olives
- Frigate tuna in oil
- 1 red onion
- 1 lemon
- Extra virgin olive oil
- Salt
- Cook the quinoa and set aside.
- Chop the berries, avocado, cherry tomatoes, olives and mix with the quinoa. Add the red onion cut into julienne strips.
- Prepare a vinaigrette with lemon juice, extra virgin olive oil and salt.
- Add and mix together.
Finishing and presentation
- Garnish with chopped red onion and the frigate tuna.
