Ingredients and preparation
For the honey and mustard vinaigrette:
• 60g of extra virgin olive oil
• 20g of 25 year old sherry vinegar
• 3g of fine salt
• 15g of honey
• 10g of wholegrain mustard
- Dissolve the salt, honey and mustard in the vinegar and stir the mixture together with the oil using a whisk.
- Save in a bowl and set aside.
To season the salad:
• 400g of cherry tomato
• 100g of diced fresh cheese
• 100g of drained canned tuna
• 50g of honey and mustard vinaigrette
• 3g of fine salt
• 8g of chopped fresh basil
- Put the cherry tomatoes, diced fresh cheese and canned tuna in a bowl.
- Salt to taste.
- Season with the honey and mustard vinaigrette.
Others:
• Washed raw cauliflower
• Microplane grater
• Chervil leaves
Finish and presentation
- Serve the salad onto each plate and finish by grating the raw cauliflower.
- Decorate with chervil leaves.
